House of Herbivores Energy Balls
I used to make hundreds of these when I ran my little meal prep company Glow By Emma. They were on my menu from day one and became hugely popular, eventually being sold in Glossop Wholefoods and to this day lovely customers still ask if they can buy the ‘Glow Buns’ hence why I’m sticking to the name.
They are a really easy thing to make, they keep really well in the fridge for up to ten days and also freeze well.
They are packed with goodness making them the perfect pre/post workout snack or simply a healthy treat anytime of day.
I’ve come over all American with my cup measurements but it’s just so much easier, you can convert to grams but if you have a set of cup measurers then it saves time weighing.
(Makes approximately 8 buns depending on how big you roll them)
1 cup Pumpkin seeds
1 cup Sunflower seeds
1 cup Goji berries
1/2 cup Chia seeds
1.5 cups Raisins
1 tbsp Agave nectar
2 tbsp Peanut butter
In a large mixing bowl combine the seeds, berries and raisins and drizzle the agave over.
Add the peanut butter and mix well. The peanut butter measurement is very much done by eye, 2tbsp is a rough approximation, add more if needed. You want to achieve a mix that sticks together but isn’t really wet. If it comes to a point where it looks like you’ve added too much peanut butter just shake in more seeds, berries and raisins.
Pop the bowl in the fridge for 1 hour – this firms the mix up ready for shaping.
Roll into balls, any size you like really and place into little muffin cases for easy storage.
Place in an airtight container and keep refrigerated.
