Vegan Spaghetti Carbonara

Carbonara was my favourite choice at an Italian restaurant pre vegan, or indeed if I was grabbing a quick ready meal I would invariably go for this. I’m not sure why I have waited almost three years to try and veganise it, it was so easy and tasted exactly like my old favourite. The kids loved it, as did my other half Matt. Beau has requested it pretty much every day since I made it.
The best part……..it takes about ten minutes to prep and cook, its super indulgent and 100% vegan! What is not to love?

I used the Vivera bacon pieces after some sound advice on my blog page, a comment left on a post suggested it would be the best option and they were not wrong! I do love the Think bacon rashers too but the Vivera stood up so well to cooking in the sauce for a while and also it is pre-chopped so adds to the speed of this meal.

Ingredients
Vivera Bacon Pieces – 1 pack
Oatly Creamy Oat Fraiche – 200ml
Dairy Free Spread – half a tablespoon
4 Cloves of Garlic – Crushed
1 Veg Stock Cube
White wine – a good lug
Vegan Grated Cheese – a few handfuls – I use the Asda Free From Cheddar, it melts well and is our favourite.
Paprika – a small shake
Nutmeg – small shake
Black Pepper – to season, I used plenty
Spaghetti or Linguine
Method
Bring a large pan of salted water to the boil and cook your pasta according to the packet instructions
Whilst the pasta is cooking…….
In a large frying pan add the butter and crushed garlic, allow to sizzle for a minute or so.
Add the white wine and veg stock cube, fry off for another minute.
Add the Vivera, Oatly, paprika, nutmeg and black pepper and stir well.
Cook for 5-6 minutes until piping hot and cooked through. Do not be alarmed if your sauce looks pink, it is just the Vivera making it this colour and once stirred through the pasta the colour returns to normal.
Add a handful of the grated vegan cheese and cook for a further 2 minutes, till melted.
Taste and season with more pepper if required.
Stir the sauce through the drained spaghetti or linguine and serve immediately with a sprinkle of the grated cheese over the top.
